One of my favorite vendors at the market was the egg man. Maybe you already know about my love of eggs - there’s just something about that smooth surface and how they all look piled on top of each other that’s so beautiful and natural. There were piles of eggs at this vendor from ducks, quails, chickens – fermented and fresh!
I love finding the ones that are slightly oddly shaped – whether the top is more tapered or the side a bit bumped. 
After you give the vendor your order, he places each on a light for inspection before selling it to you. It’s such a classic way of testing eggs that hasn’t changed since my mom was a kid. The light allows him to spot if a baby chick has started to grow inside. I love the look of the glowing egg, but maybe not so much if there’s a chicken inside it!
