Quick Pickles with Shio Koji

Shio Koji Picked Cucumbers

Are you craving pickles without the work and wait?  Shio Koji to the rescue!  Just clean and cut your cucumbers, mix it with a little bit of shio koji (1 tbsp per small cucumber), and refrigerate it overnight.  The next day, don’t wash off the shio koji – just drain a bit of the liquid, and you’re ready to go.  This is a quick pickle I can get used to!
